  • 3 red bell peppers (any color will do)
  • 1 tablespoon grapeseed oil
  • ¼ teaspoon sea salt
  • Fresh ground black pepper to taste

Stuffing:

    • ¼ cup grapeseed oil
    • 1 yellow onion, thinly sliced or diced
    • 2-3 cloves garlic, finely chopped
    • ½ teaspoon kosher or sea salt
    • ½ diced bell pepper
    • 4 cups finely chopped collard greens
    • 1 cup cooked quinoa
    • ¼ teaspoon crushed red pepper flakes
    • ¼ teaspoon freshly ground black pepper
    • 2 tablespoons lemon juice
