Navy Bean and Kale Soup - Holistic Wellness and Health

Ingredients

  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, diced
  • 2 celery stalks, diced
  • 1/2 cup brown rice
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon fresh rosemary, finely chopped
  • 4 cups vegetable broth
  • 2 bay leaves
  • 1 bunch kale, de-stemmed and roughly chopped
  • 2 cups navy beans, soaked and cooked
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat 2-3 tablespoons of water over medium heat, cook onions until translucent.
  2. Stir in minced garlic, carrots and celery. Cook until vegetables begin to soften.
  3. Add oregano, rosemary, thyme and paprika. Cook for 1 minute stirring frequently.
  4. Add rice, broth and bay leaves. Bring to boil. Reduce heat to low, cover, and let simmer for 45 minutes or until rice is cooked.
  5. When rice is almost tender, stir in kale and navy beans and cook until kale is wilted and beans are hot.
