Ingredients

  • 8 cups baby spinach, or large spinach leaves thinly sliced (washed well)
  • 1 cup carrot, shredded
  • 1 cup green onion (scallion), sliced

 

               For the Slaw Dressing:

  • 1 cup vegan mayonnaise 
  • 2 tablespoon white wine vinegar
  • 1 tablespoon white sugar, granulated
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt 
  • ½ teaspoon ground black pepper

Directions

  1. Place the spinach in a large bowl. 
  2. Add the carrots and green onion to the spinach. Set the bowl aside.
  3. In a small bowl, whisk together the dressing ingredients. 
  4. Pour the vinaigrette over the kale slaw, and stir to combine the ingredients. For the best flavor, allow the slaw to rest in the fridge for 30 minutes-1 hour.
  5. Serve the slaw on tacos, BBQ sandwiches, or as a side salad.
