Colcannon (Irish Mashed Potatoes w/Greens) - Holistic Wellness and Health
Ingredients
  • 2 to 2 ½ pounds of potatoes (Yukon or Russet work well),
  • Salt (Kosher, Pink Himalayan, Sea Salt)
  • 8 tablespoons (1/2 cup) plant-based butter, plus more for serving
  • cup lightly packed kale
  • 1 cup lightly packed cabbage
  • 3green onions, minced (about 1/2 cup)
  • 2 cloves of garlic, thinly sliced (optional)
  • 1-1 ½  cups of plant-based milkor plant-based cream
  • Black pepper to taste
Instructions
  1. In an large pot, cover potatoes with water and add salt.
  2. Bring to a boil over medium-high heat, then reduce heat and simmer until a paring knife slides easily through the flesh, 30–40 minutes.
  3. Drain in a colander and let cool slightly.
  4. Peel the potato.
  5. In the same large pot, melt 6 tablespoons of plant-based butter over medium heat.
  6. Add scallions and cook, stirring frequently, until soft. About 5 minutes.
  7. Add garlic and cook, stirring frequently, until garlic is fragrant and scallions start to brown around the edges, about 3 minutes longer.
  8. Add cabbage and kale and cook, stirring constantly, until wilted.
  9. Add plant-based milk or cream and bring to a simmer.
  10. Add potatoes back to the pot, then coarsely mash with a potato masher. Season with salt and pepper.
  11. Transfer colcannon to a large serving bowl. Top with remaining 2 Tbsp. butter and sprinkle with scallion.
