Ingredients

    • 24 ounces of mixed mushrooms 
    • 1 red onion finely diced
    • 1 bell pepper, diced
    • 1 celery stalk, sliced
    • 4 garlic cloves minced
    • 1 tablespoon, rosemary chopped
    • 1 teaspoon thyme, chopped stem removed
    • 1 teaspoon dried oregano
    • ¼ cup vegetable broth or 2 tablespoon oil
    • 2 tablespoon gluten-free soy sauce or tamari
    • 1 quart vegetable broth or mushroom broth
    • 1 cup uncooked quinoa or other grain of choice
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1 teaspoon smoked paprika
    • 1 teaspoon ground black pepper

Directions

  1. In a large pot over medium heat, sauté onions and peppers with veggie broth or oil until onions are translucent. 
  2. Add garlic, herbs, soy sauce, mushrooms, and celery, sauté until aromatic.
  3. Add veggie broth and bring to a boil. 
  4. Add quinoa, onion powder, garlic powder, smoked paprika and black pepper.
  5. Cover and let cook on medium heat for about 20 minutes, stirring occasionally.
  6. Serve with crackers or corn bread.
  7. Enjoy!
